Smoked Pulled Pork Eggs Benedict

This particular Eggs Benedict recipe uses our leftovers from our Smoked Pulled Pork recipe and our Easy Hollandaise Sauce Recipe. If you don’t have leftover pork, you can skip that part and have a more traditional Eggs Benedict. But, if you like to plan your meals ahead, this smoked pulled pork will really pair very well with the poached egg, rich chard, and our Creamy Hollandaise Sauce. This fancy breakfast really only takes 10 minutes to put together not to mention the results are as good as any fancy restaurant. It’s a great meal to impress morning guests or to savor as a personal treat on a special day off.

Ingredients:

  • Eggs
  • Vinegar
  • English Muffin
  • Butter
  • Swiss Chard
  • Pulled Pork
  • Creamy Hollandaise Sauce
  • Mesquite

Cookware Required:

  • Toaster
  • Walled Frying Pan
  • Double Boiler (For the Hollandaise Sauce)

A double boiler is ideal but, in the same way, it is easy to take a metal bowl and place it over a pot of simmering water. If you are looking for a double boiler, it is nice to have one with a handle like the one shown on the Amazon affiliate link below:

Making Eggs Benedict

To start this recipe, pull out your leftover pulled pork. You can heat it up but it does not need to be. I just thaw it out and gently heat it prior to using it.

Make Hollandaise Sauce

If you don’t already have creamy hollandaise sauce, you can start by making it. Our recipe is here and I promise it is not as difficult as it looks. At the same time as you heat up your double boiler for the hollandaise sauce, you can start heating another pan for the poached eggs.

How to Poach an Egg

To poach an egg, take a deep pan and fill it with two inches of water. Add 2 teaspoons of vinegar and a teaspoon of salt. When the pan begins to simmer give it a good stir to make a tornado in the middle. Drop your egg in the tornado, turn off the heat, cover, and let sit for 5 minutes. If you want to cook more than one egg at a time, do not stir, but spread the eggs around the pan.

Making the Eggs Benedict

While your eggs are being poached, cut your chard into strips and boil until it is lightly cooked. By the way, Chard is a super food, in light of this, you should read more about the benefits of eating this colorful vegetable here.

Toast an English muffin and butter it.

Layer the Swiss chard on the English muffin.

The smoked pulled pork should rest on top of the chard.

Carefully scoop your poached egg from the water and gently place it on top of the pork; in short, don’t break your egg yet.

Drizzle the Creamy Hollandaise Sauce on top of the egg to additionally add color and creamy flavor.

Splash the dish with some mesquite then for a great flavor and decoration.

We wanted just a drizzle more hollandaise coupled with the garnish to make the Eggs Benedict look amazing. After you garnish with a spring of parsley, take a selfie with it and post it on Instagram and Facebook.
