Chicken Burger Recipe with Zucchini

Zucchini Chicken Burger Recipe

A zucchini chicken burger is a light, low-calorie and low-carb meal that takes advantage of great summer squash like your abundant zucchini in mid to late summer. This recipe only calls for one pound of chicken to make six burgers but they taste like they are packed with meat making the zucchini chicken burger a great option for a small or light meal plus it is super cheap to make.

Ingredients

  • 1 pound ground chicken
  • 1 egg
  • 1 cup panko bread crumbs
  • 1/2 cup copped onion
  • 2 small squash - about 3 to 4 cups (one zucchini and one yellow squash shown.)
  • 2 tbsp vegetable oil

Instructions

  1. Mix all ingredients in a medium bowl, except for the vegetable oil.
  2. Heat a medium or large pan with the vegetable oil and preheat your oven to 400 degrees. The oil should heavily coat the bottom of the pan.
  3. Hand make the burger patties and place them in the heated pan. Cook three minutes per side so that the burgers begin to brown.
  4. Remove from the pan and place in a preheated oven for another 10 minutes to finish cooking the chicken. If desired, put a piece of cheese on them as well and let it melt in the oven.

Step by Step Instructions

Mix all ingredients in a medium bowl, except for the vegetable oil.

Heat a medium or large pan with the vegetable oil and preheat your oven to 400 degrees. The oil should heavily coat the bottom of the pan.

Hand make the burger patties and place them in the heated pan. Cook three minutes per side so that the burgers begin to brown.

Remove from the pan and place in a preheated oven for another 10 minutes to finish cooking the chicken. If desired, put a piece of cheese on them as well and let it melt in the oven. Browning in the pan followed by baking gives the burgers a nice firm texture.

Plate with asparagus and top with your favorite toppings. We show broiled onion, avocado and bacon.
